Twice-baked Non-potato casserole
- 1 head cauliflower, cut into flowerets and steamed until very tender and then mashed with butter, salt and pepper
- 1 1/4 to 1 1/2 c. full fat sour cream
- 1 to 2 green onions, sliced
- 8 oz. shredded cheddar cheese, divided
- 8 oz. bacon, cooked & crumbled
