Italian Beef & Zucchini Pie
- 1/2 lb. ground beef, browned
- 4 c. sliced zucchini
- 1 c. chopped onion
- 1 1/2 tsp. dried parsley
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 1/4 tsp. cayenne pepper
- 2 eggs
- 1 - 2 cups mozzarella cheese
Sautee Zucchini and onion in a little oil until tender. Stir in browned beef. Beat eggs with a fork and add salt, cayenne, and herbs. Mix well. Spread zucchini/beef mixture in a greased pie plate and pour egg mix over it.
Bake at 350°F for 20 - 25 minutes. Let sit for 5 minutes before cutting and serving. We found that a spoonful of spaghetti sauce over the top of each piece was a tasty touch.
