Chicken Gumbo

Chicken Gumbo
  • 6 chicken breasts, cubed
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 3 Tbsp. butter
  • 1 lb. fully cooked smoked sausage, sliced
  • 14 oz. can or 2 cups chicken broth
  • 3 c. water
  • 1/2 c. uncooked long grain rice
  • 2 8 oz. or 15 oz. can tomato sauce
  • 15 oz. can diced tomatoes
  • 15 oz. can whole kernel corn, drained
  • 1 medium green pepper, diced
Shake chicken in a container or plastic bag with the salt and peppers.   Brown in a large pan with melted butter.  Add sausage, chicken broth, water and rice.  Bring to a boil, cover and reduce heat.  Simmer for 15 minutes, stirring occasionally, until rice is tender.  Add rest of ingredients and bring to a boil; boil 5 minutes.  Serve.
